ingredients
- 1 pound fresh udon noodles
- 2 tablespoons sesame oil
- 3 cloves of minced garlic
- 1 tablespoon freshly grated ginger
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon chili paste
- 5-6 chopped scallions
- 2 tablespoons toasted sesame seeds
- 1/2 cup vegetable broth
- for garnish sliced scallions

Method
Step 1
Prepare the Sauce: Whisk together the vegetable broth, soy sauce, rice vinegar, honey, and chili paste in a small bowl. Set aside.
Step 2
Cook the Aromatics: Heat the sesame oil over medium heat in a large skillet or wok. Add the minced garlic and freshly grated ginger, and sauté for about 1-2 minutes until fragrant, being careful not to burn them.
Step 3
Add Sauce: Pour in the soy sauce mixture and stir to combine. Bring the mixture to a simmer.
Step 4
Cook the Noodles: Add the fresh udon noodles directly into the skillet. Toss to combine and coat the noodles with the sauce. Stir in the chopped scallions and toasted sesame seeds. Continue to cook for 4-5 minutes, until the noodles are heated through and the sauce has thickened to your liking.
Step 5
Garnish and Serve: Transfer the noodles to serving bowls. Garnish with additional sliced scallions and toasted sesame seeds.
