ingredients
- 1 pound diced into ½-inch cubes sushi grade ahi tuna
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup jasmine rice
- 2 cups water
- 1 cup diced mango
- 1 medium diced cucumber
- 1 large diced avocado
- 1 small thinly sliced jalapeno
- for garnish chopped green onion

For the Sriracha May Sauce:
- 1 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon soy sauce
- 1 tabelspoon freshly squeezed lime juice
- to taste salt and ground black pepper
Method
Step 1
Prepare the Ahi Tuna: In a bowl, gently toss the diced tuna with soy sauce and sesame oil until it’s well coated. Cover and refrigerate until it’s ready to assemble.
Step 2
Make the Sriracha Mayo Sauce: In another small bowl, combine the mayonnaise, Sriracha sauce, soy sauce, lime juice, salt, and ground black pepper. Adjust the amount of Sriracha sauce to reach your preferred spiciness level.
Step 3
Cook the Jasmine Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed jasmine rice and 2 cups of water. Place the saucepan over high heat and bring the rice and water to a boil. Once boiling, immediately reduce the heat to low to maintain a gentle simmer. Cover the saucepan with a tight-fitting lid and let the rice simmer for about 15-20 minutes. let the rice sit with the lid on for an additional 5 minutes to finish cooking. After resting, remove the lid and fluff the jasmine rice with a fork.
Step 4
Assemble the Poke Bowl: Divide the cooked jasmine rice into two bowls as the base for your poke bowls. Arrange the marinated tuna on top of the rice in each bowl. Surround the tuna with diced mango, cucumber, avocado, and jalapeño slices for a burst of flavor and freshness.

Drizzle with Spicy Mayo Sauce: Drizzle the spicy mayo sauce generously over the top of the ingredients.
