- 3 ripe bananas
- 1/2 cup melted butter
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour

- 1/2 teaspoon sea salt

For the Sea Salted Caramel SDauce
- 1/2 cup brown sugar
- 2 tablespoons unsalted butter
- 1/4 cup heavy cream
- 1/2 teaspoon sea salt
Method
Step 1
Make the Peanut Butter: Process 1 1/2 cups of roasted peanuts in a food processor until they reach a smooth, butter-like consistency. Scrape down the sides as needed to ensure even processing. Chop the remaining 1/4 cup of roasted peanuts and set aside to use for the crunchy topping later.
Step 2
Prepare the Salted Caramel Sauce: Melt the brown sugar in a small saucepan over medium heat – stirring constantly to prevent burning – until it turns a deep amber color, 3-5 minutes. Add the butter and stir until it’s melted and combined, 1-2 minutes. Slowly pour in the heavy cream, stirring until it’s well combined. Remove from heat and stir in the sea salt. Set aside to cool.
Step 3
Prepare the Wet Ingredients: Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Mix the mashed bananas, melted butter, brown sugar, eggs, and vanilla extract in a large bowl. Stir in the peanut butter you made in the first step.
Step 4
Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and sea salt.
Step 5
Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients, stirring until combined.
Step 6
Bake: Pour the batter into the prepared loaf pan. Sprinkle chopped roasted peanuts on top for added crunch. Bake for 60–70 minutes, until a toothpick inserted in the center comes out clean.
Step 7
Drizzle with Caramel: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Drizzle the sea-salted caramel sauce over the top of the bread.
