ingredients
- 4 medium peeled and cut into equal-sized pieces turnips
- 2 tablespoons extra virgin olive oil
- 1 tablepsoon chopped rosemary
- 2 cloves of minced garlic
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 2 tablespoons butter
- to taste salt and ground black pepper
Method
Step 1
Preheat the Oven: Preheat your oven to 425°F (218°C).
Step 2
Roast the Turnips: In a large mixing bowl, toss the turnip wedges with extra virgin olive oil, salt, and ground black pepper until they are well coated. Spread the seasoned turnips in a single layer on a baking sheet. Roast the turnips in the preheated oven for about 20 minutes, or until they are tender and have developed a slight golden color. Turn them halfway through for even roasting.
Step 3
Prepare the Glaze: While the turnips are roasting, prepare the glaze. In a small saucepan, combine the chopped rosemary, minced garlic, honey, balsamic vinegar, and butter. Heat the mixture over medium-low heat, stirring occasionally, until it has reduced by half and has a syrupy consistency. This should take about 10-15 minutes.
Step 4
Glaze the Turnips: Once the turnips are done roasting, remove them from the oven. Drizzle the glaze over the roasted turnips, and gently toss them to coat evenly.
