Udon Stir-Fry
- 8 ounces udon noodles
- 2 tablespoons sesame oil
- 1 thinly sliced red bell pepper
- 4 chopped green onions
- 2 large thinly sliced carrots
- 3 cloves minced garlic
- 1 tablespoon minced ginger
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon mirin
- 1 tablespoon honey
- 1 teaspoon chili flakes

Reverse Seared Ribeye
- 1 pound ribeye steak
- 2 tablespoons vegetable oil
- 2 tablespoons salt
- 2 tablespoons ground black pepper
Method
Reverse Seared Ribeye
Step 1
Remove the steak from the refrigerator and season generously with salt and pepper on both sides. Allow the steak to rest at room temperature for about an hour to ensure even cooking.
Step 2
Preheat your oven to 200°F. Place a wire rack over a baking sheet. Place the seasoned steak on the wire rack. Cook in the preheated oven for about 1 hour, depending on the thickness and desired level of doneness. Use a meat thermometer to check the internal temperature. For medium-rare, aim for an internal temperature of 125°F.
Step 3
Remove the steak from the oven and let it rest for 10-15 minutes. This allows the juices to redistribute throughout the meat.
Udon Stir-Fry
Step 1
If you’re using fresh udon noodles, they typically just need a quick rinse under hot water to separate them. If using dried udon, cook them according to the package instructions until they are al dente, then rinse in cold water and drain.
Step 2
In a small bowl, combine soy sauce, fish sauce, mirin, honey, and chili flakes. Mix well and set aside.
Step 3
In a large cast iron skillet, heat 3 tablespoons of sesame oil over medium-high heat. Add the minced garlic and ginger, stirring quickly for about 30 seconds. Add the bell peppers, carrots, and green onion. Stir fry for 3-4 minutes or until the vegetables are tender but still have some crunch.
Step 4
Add the cooked udon noodles to the skillet. Pour the sauce mixture over the top. Stir everything together ensuring the noodles and ingredients are well coated with the sauce. Continue to cook for another 2-3 minutes.
Step 5
Transfer the udon stir-fry to a bowl and set aside.
Reverse Seared Ribeye (Cont.)
Step 1
Heat the same cast iron skillet used to cook the udon stir-fry. Once very hot, add 2 tablespoons of vegetable oil.
Step 2
Place the steak in the hot skillet. Sear for 1-2 minutes on each side, or until a deep golden-brown crust forms.
Step 3
Remove the steak from the skillet and let it rest for another 5-10 minutes. This step is crucial for a juicy steak.
Step 4
Slice against the grain and serve over a serving of the udon stir-fry. [Optional] Garnish with a drizzle of chili oil and chopped green onion.
