ingredients

  • 4 red prickly pears
  • 1 cup granulated sugar
  • 1 cup water

Method

  • Step 1

    Cut off both ends of each prickly pear and make a lengthwise incision along the skin. Peel off the skin of the prickly pears, revealing the flesh inside. Chop the flesh into small pieces.

  • Step 2

    Place the chopped prickly pear flesh in a blender or food processor and blend until smooth. Set a strainer above a small saucepan. Pour the blended prickly pear mixture into the strainer, allowing the juice to strain through while separating the seeds and pulp. Use a spoon to press down and extract as much juice as possible.

  • Step 3

    In the saucepan with the prickly pear juice, add sugar and water.

  • Step 4

    Bring the contents of the saucepan to simmer over medium heat, stirring well to dissolve the sugar. Allow the mixture to simmer for 15 minutes, continuing to stir occasionally. It will thicken as it cooks.

  • Step 5

    Remove the saucepan from the heat and let the syrup cool completely.

  • Step 6

    Once cooled, transfer the red prickly pear syrup to a sterilized bottle or jar and store it in the refrigerator.
