- 1 pound trimmed and halved Brussels sprouts
- 2 tablespoons extra virgin olive oil

- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 clove of minced garlic
- 1 teaspoon grated ginger
- as needed warm water

Step 1
Preheat the Oven: Set your oven to 450°F (232°C).

Prepare the Brussels Sprouts: Toss the halved Brussels sprouts in a large bowl with extra virgin olive oil, salt, and ground black pepper until they are evenly coated.

Roast the Brussels Sprouts: Spread the seasoned Brussels sprouts on a baking sheet in a single layer, ensuring they’re not too crowded. Roast in the preheated oven for about 15-20 minutes or until they are charred to your liking. Halfway through, stir them or shake the pan to ensure even charring on all sides.

Make the Peanut Sauce: While the sprouts are roasting, prepare the peanut sauce. In a small bowl, whisk together peanut butter, soy sauce, honey, lime juice, minced garlic, and grated ginger. Gradually add warm water until the sauce reaches a desirable, pourable consistency.

Check the Brussels Sprouts: Keep an eye on the sprouts as they cook, looking for that perfect charred exterior and tender inside. Adjust the roasting time if necessary, depending on the size of your Brussels sprouts.

Serve: Once the Brussels sprouts are charred to perfection, remove them from the oven and transfer them to a serving dish. Drizzle the warm peanut sauce generously over the top. If desired, garnish with chopped green onion and red pepper flakes.
