  • 5 ripe passion fruits
  • 1 cup water
  • 1 cup granulated sugar

Method

  • Step 1

    Cut the passion fruits in half using a sharp knife. Scoop out the pulp and seeds into a bowl.

  • Step 2

    In a small saucepan, combine the granulated sugar and water. Bring to a boil, whisking occasionally to dissolve the sugar.

  • Step 3

    As soon as the simple syrup mixture reaches a boil, stir on the pulp and seeds of the passion fruit.

  • Step 4

    Turn off the heat, cover the pan, and let the pulp and seeds steep in the hot liquid for 1 hour.

  • Step 5

    Place a fine-mesh strainer or cheesecloth over a bowl. Pour the steeped liquid through the strainer to separate the juice from the seeds.

  • Step 6

    Transfer the syrup to a sterilized glass jar or bottle for storage. Store the passion fruit syrup in the refrigerator for up to two weeks.
