For the Moroccan-Inspired Roast Beef
- 2-3 pound eye round roast
- 2 tablespoons extra virgin olive oil
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 1 tablespoon coriander
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 1 large sliced onion
- 1 cinnamon stick
- 3 cloves of smashed garlic
- 2 cups beef broth

For the Lemon Tahini Drizzle
- 1/4 cup tahini
- 2 tablespoons freshly squeezed lemon juice
- 1 clove of minced garlic
- 1 tablespoon soy sauce
- as needed water

Method
Step 1
Prepare the Beef: Mix paprika, cumin, coriander, chili powder, salt, and ground black pepper in a small bowl. Rub this mixture all over the eye round roast. Rub it in with 1 tablespoon of extra virgin olive oil. Let it marinate for at least 1 hour or overnight in the refrigerator.
Step 2
Preheat the Oven: Preheat your oven to 300°F (149°C).
Step 3
Brown the Beef: Heat a tablespoon of extra virgin olive oil in your Dutch oven over medium-high heat. Sear the beef on all sides until nicely browned, approximately 2-3 minutes per side. Remove the beef and set aside.
Step 4
Sauté the Aromatics: Add the sliced onion and smashed garlic to the same Dutch oven. Cook until the onions are softened and translucent, about 5 minutes.
Step 5
Cook the Beef: Return the beef to the Dutch oven. Add the cinnamon stick and beef broth. Bring the mixture to a simmer, then cover it with the lid and place it in the preheated oven. Roast for 3 hours or until the beef is tender to your liking.
Step 6
Make the Lemon Tahini Dressing: Whisk together tahini, soy sauce, lemon juice, minced garlic, and salt until smooth. Add water if necessary to adjust the consistency. The dressing should be creamy but pourable.
Step 7
Finish and Serve: Once the beef is tender, remove it from the oven and let it rest for 15 minutes before slicing. Slice 1/4″ slices against the grain and serve with the lemon tahini dressing. This dish pairs well with couscous.
