Recipe Description

Moroccan-inspired Roast Beef with Lemon-Tahini Sauce is a genuinely exquisite fusion of flavors. This culinary masterpiece combines the warm, aromatic spices of Moroccan cuisine with the rich, nutty depth of Middle Eastern tahini. Soy sauce adds a subtle twist to the dish, nodding to the savory depths of Asian flavors. It’s a testament to the transformative power of cooking, where ingredients from across the globe can come together in one pot, creating something truly remarkable that transports the senses to faraway lands while offering a comforting embrace of familiar tastes. This dish begins with the eye-round roast, a cut of lean and flavorful beef that absorbs and melds the spices it’s marinated in, transforming under heat to yield tender, juicy, and richly flavored slices. The spice blend is thoughtfully chosen. Paprika, cumin, and coriander build the base with their earthy and slightly sweet notes, while chili powder adds a whisper of heat, creating a gentle warmth that lingers with every bite. The blend is balanced, ensuring that each spice contributes its voice to the harmony without overwhelming the others. As the beef browns in the Dutch oven, its surfaces caramelizing to a deep, enticing crust, it’s joined by a cinnamon stick, subtly altering the dish’s flavor landscape. This singular addition infuses the beef with a gentle sweetness that deepens the dish’s flavors, tying the spices together in a warm, inviting embrace. The lemon-tahini sauce is prepared while the beef is roasting, slowly tenderizing in the aromatic broth. The sauce, with its base of creamy tahini, is a homage to the versatility and richness of sesame seeds, ground into a paste that serves as a cornerstone of Middle Eastern cuisine. Lemon juice cuts through this richness, its acidity brightening the sauce, while garlic adds depth and warmth. Including soy sauce enriches the sauce’s flavors, bridging the various culinary influences that inspire the dish. Slicing into the Moroccan-inspired Roast Beef reveals the success of the slow cooking process; the meat is tender, infused with the spices and the subtle sweetness of cinnamon, and ready to be adorned with the Lemon-Tahini Sauce. The sauce complements and contrasts, its brightness and depth highlighting the spices’ warmth and the beef’s savory richness. This dish is more than just a meal; it’s a journey across continents and, through time, a celebration of how food can bring worlds together, creating new traditions and flavors. The Moroccan-inspired Roast Beef with Lemon-Tahini Sauce is not just to be eaten but to be experienced. Each bite reminds us of the beauty and diversity of the world’s cuisines and the endless possibilities that exist when they come together on a single plate.

ingredients

For the Moroccan-Inspired Roast Beef

  • 2-3 pound eye round roast
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 tablespoon coriander
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 large sliced onion
  • 1 cinnamon stick
  • 3 cloves of smashed garlic
  • 2 cups beef broth

ingredients

For the Lemon Tahini Drizzle

  • 1/4 cup tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 1 clove of minced garlic
  • 1 tablespoon soy sauce
  • as needed water
  • to taste salt

Method

  • Step 1

Prepare the Beef: Mix paprika, cumin, coriander, chili powder, salt, and ground black pepper in a small bowl. Rub this mixture all over the eye round roast. Rub it in with 1 tablespoon of extra virgin olive oil. Let it marinate for at least 1 hour or overnight in the refrigerator.

  • Step 2

Preheat the Oven: Preheat your oven to 300°F (149°C).

  • Step 3

Brown the Beef: Heat a tablespoon of extra virgin olive oil in your Dutch oven over medium-high heat. Sear the beef on all sides until nicely browned, approximately 2-3 minutes per side. Remove the beef and set aside.

  • Step 4

Sauté the Aromatics: Add the sliced onion and smashed garlic to the same Dutch oven. Cook until the onions are softened and translucent, about 5 minutes.

  • Step 5

Cook the Beef: Return the beef to the Dutch oven. Add the cinnamon stick and beef broth. Bring the mixture to a simmer, then cover it with the lid and place it in the preheated oven. Roast for 3 hours or until the beef is tender to your liking.

  • Step 6

Make the Lemon Tahini Dressing: Whisk together tahini, soy sauce, lemon juice, minced garlic, and salt until smooth. Add water if necessary to adjust the consistency. The dressing should be creamy but pourable.

  • Step 7

Finish and Serve: Once the beef is tender, remove it from the oven and let it rest for 15 minutes before slicing. Slice 1/4″ slices against the grain and serve with the lemon tahini dressing. This dish pairs well with couscous.
