For the Mocha Pancakes
- 2 cups all-purpose flour
- 1/2 cup cacao powder
- 1/2 cup sugar
- 1 1/2 tablespoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 1/2 cup strongly brewed coffee
- 4 tablespoons melted and cooled unsalted butter
- for garnish powdered sugar

For the Coffee Syrup
- 1 cup strong brewed coffee
- 1 cup sugar
- 1 teaspoon vanilla extract
Method
Step 1
Prepare the Coffee Syrup: In a small saucepan, mix the brewed coffee and granulated sugar. Bring to a boil over medium heat, stirring until the sugar is dissolved. Reduce the heat and let it simmer until the mixture thickens and reduces by about half, which should take around 10-15 minutes. Once off the heat, stir in the vanilla extract and set aside to cool. The syrup will thicken as it cools.
Step 2
Mix Dry Ingredients: Whisk together flour, cocoa powder, sugar, baking powder, and salt in a large bowl. Set aside.
Step 3
Combine with Wet Ingredients: Beat eggs with milk, cooled coffee, and vanilla extract in a separate bowl. Stir wet ingredients into dry ingredients until just combined, then fold in melted butter. Avoid overmixing.
Step 4
Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter for each pancake onto the hot surface. Cook until bubbles appear on the surface and the edges look set, then flip and cook until the other side is golden brown. This should take 5-6 minutes total.
Step 5
Serve: Stack the warm pancakes on plates. Drizzle generously with the coffee syrup and dust with powdered sugar for a beautiful and delicious finish.
