- 3 large cut into wedges sweet potatoes
- 2 tablespoons extra virgin olive oil
- 4 slices of chopped bacon
- 1/2 cup maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- to taste salt and ground black pepper
- for garnish parsley
Method
Step 1
Preheat the Oven: Preheat your oven to 400°F (200°C).
Step 2
Prepare the Sweet Potatoes: In a large mixing bowl, toss the sweet potato cubes with the extra virgin olive oil, salt, ground black pepper, and paprika until evenly coated.
Step 3
Roast the Sweet Potatoes: Spread the seasoned sweet potatoes out in a single layer on a baking sheet lined with parchment paper or aluminum foil. Roast in the preheated oven for about 25-30 minutes, or until tender and starting to caramelize around the edges.
Step 4
Cook the Bacon: While the sweet potatoes are roasting, cook the chopped bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove the cooked bacon from the skillet and place it on a plate lined with paper towels to drain excess grease.
Step 5
Prepare the Glaze: In the same skillet – or transfer the bacon fat to a small saucepan – add and heat the maple syrup over medium heat until warm. Stir in the Dijon mustard until well combined. Season to taste with salt and ground black pepper. Simmer the glaze for 5-10 minutes, until it reduces by about half and thickens to your liking.
Step 6
Glaze the Sweet Potatoes: Once the sweet potatoes are done roasting, remove them from the oven and transfer them to a serving dish or bowl. Drizzle the warm glaze over the roasted sweet potatoes.
Step 7
Garnish and Serve: Sprinkle the crispy bacon over top of the sweet potatoes. Garnish with chopped fresh parsley for a pop of color and flavor. Serve hot as a delicious side dish.
