- 2 large peeled and cubed sweet potatoes
- 1 cup ricotta cheese
- 1 cup flour
- 2 large slightly beaten eggs
- 2 tablespoons honey
- 1 tablespoon chopped thyme leaves
- 1 zested lemon

- 1/4 cup honey
- 1 juiced lime
- Pinch of salt
Method
Step 1
Steam Sweet Potatoes: Place the sweet potato cubes in a steamer basket over boiling water, cover, and steam until tender, about 15 minutes. Let them cool slightly, then mash until smooth.
Step 2
Prepare Fritter Batter: Mix the mashed sweet potatoes, ricotta cheese, flour, eggs, honey, thyme, and lemon zest in a large bowl. Season with salt and ground black pepper to taste.
Step 3
Fry the Fritters: Heat a good amount of vegetable oil (1″ to 2″ deep) in a large frying pan over medium heat. Once hot, spoon the batter into the oil, flattening the dollops slightly to form patties. Fry on each side for about 3-4 minutes until golden brown and crispy. Transfer the cakes to a paper towel-lined plate to drain excess oil.
Step 4
Make the Lemon-Honey Glaze: Whisk together the honey, lemon juice, and a pinch of salt in a small bowl until well combined. Adjust the taste as necessary, adding more honey or lemon juice to suit your preference.
Step 5
Serve: Place the patties on a serving dish and drizzle generously with the lemon-honey glaze before serving.
