ingredients
- 16 ounces sweet potato gnocchi
- 1 pound lamb sausage
- 1 cup sliced portobello mushrooms
- 3 tablespoons extra virgin olive oil
- 4 tablespoons butter
- 3 cloves minced garlic
- 1 tablespoon fresh thyme leaves
- 1/2 cup grated parmesan cheese
- salt and ground black pepper to taste
Method
Step 1
In a large skillet, heat the olive oil over medium heat. Remove the lamb sausage from its casing and crumble it into the skillet. Cook until browned.
Step 2
Add the butter to the skillet. Once melted, add the mushrooms and sauté until they’re soft and have released their moisture.
Step 3
Add the minced garlic and thyme. Sauté for another 1-2 minutes, or until fragrant.
Step 4
Add the cooked sweet potato gnocchi to the skillet. Toss everything together until the gnocchi is well-coated and heated through. Season with salt and freshly ground black pepper to taste.
Step 5
Transfer to serving plates. Garnish with additional thyme and grated parmesan cheese.
