For the Chicken
- 2 whole chicken thighs and legs
- 2 tablespoons extra virgin olive oil
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- to taste salt and ground black pepper

For the Sauce
- 1 tablespoon extra virgin olive oil
- 1 small finely chopped onion
- 2 cloves of minced garlic
- 1 tablespoon paprika
- 1/2 cup tomato paste
- 1 cup chicken broth
- 1 teaspoon freshly squeezed lemon juice
- to taste salt and ground black pepper
Method
Step 1
Preheat the Oven: Preheat the oven to 375°F (190°C).
Step 2
Season the Chicken: In a bowl, mix the paprika, garlic powder, onion powder, thyme, oregano, salt, and ground black pepper. Rub the chicken pieces with extra virgin olive oil, and then evenly coat them with the spice mixture.
Step 3
Roast the Chicken: Arrange the chicken thighs and legs skin-side up in a roasting pan. Roast in the preheated oven for about 45-50 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (74°C) when checked with a meat thermometer.
Step 4
Prepare the Sauce: In a saucepan over medium heat, warm the extra virgin olive oil and saute the onion until soft, about 2-3 minutes. Add the garlic and cook for another 1 minute. Stir in the paprika, and then add the tomato paste. Cook for 2 minutes, stirring constantly to avoid burning.
Step 5
Simmer and Reduce the Sauce: Pour in the chicken broth, stirring well to combine everything. Bring to a simmer, and then reduce the heat to medium-low. Let the sauce simmer and reduce for 10-15 minutes to thicken slightly and deepen in flavor. Season with salt and ground black pepper to taste. Stir in lemon juice to finish.
Step 6
Serve: Allow the roasted chicken to rest for 5-10 minutes after taking it out of the oven. Plate the chicken pieces and generously spoon the sauce over them. Garnish with freshly chopped paprika.
