- 1 pound trimmed and halved Brussels sprouts
- 2 tablespoons extra virgin olive oil
- 2 tablespoons honey
- 2 tablespoons whole grain mustard
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 clove of minced garlic
- to taste salt and ground black pepper
- for garnish grated Parmesan cheese
- for garnish freshly chopped parsley
Method
Step 1
Preheat the Oven and Prepare Brussels Sprouts: Preheat your oven to 425°F (218°C). In a large bowl, toss the Brussels sprouts with extra virgin olive oil, salt, and ground black pepper until they are evenly coated.
Step 2
Roast the Brussels Sprouts: Spread the Brussels sprouts on a baking sheet in a single layer, cut side down, to maximize browning. Roast in the preheated oven for 20 minutes, or until they are browned and crispy on the edges. Halfway through the cooking time, give the pan a shake or use a spatula to turn the sprouts for even roasting.
Step 3
Prepare the Honey Mustard Glaze: While the Brussels sprouts are roasting, whisk together the honey, Dijon mustard, whole grain mustard, apple cider vinegar, and minced garlic in a small bowl. Season with salt and ground black pepper to taste.
Step 4
Glaze the Brussels Sprouts: Once the Brussels sprouts are roasted and have a nice char on them, remove them from the oven. Transfer the Brussels sprouts to a large bowl, pour the honey mustard glaze over them, and toss until they are evenly coated with the glaze.
Step 5
Finish Roasting the Glazed Brussels Sprouts: Return the glazed Brussels sprouts to the baking sheet, and spread them out in an even layer. Place them back in the oven and roast for an additional 5 minutes. This extra time allows the glaze to caramelize slightly and adhere to the Brussels sprouts.
Step 6
Serve: Transfer the glazed Brussels sprouts to a serving dish. Sprinkle grated Parmesan cheese and freshly chopped parsley over the Brussels sprouts.
