ingredients
- 2-3 pounds country-style ribs
- 2 tablespoons extra virgin olive oil
- 1 tablespoon paprika
- 1 tablespoon brown sugar
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 tablespoon sesame oil
- 2 dried chipotle peppers
- 1/2 cup honey
- 1/4 cup rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 2 cloves of minced garlic
- to taste salt and ground black pepper
- for garnish freshly chopped cilantro
- for garnish toasted sesame seeds
Method
Step 1
Prepare the Dry Rub: Combine the paprika, brown sugar, chili powder, ground cumin, salt, and black pepper. Rub the mixture over the country-style pork ribs, ensuring they are well coated. Cover and refrigerate for at least 1 hour.
Step 2
Roast the Pork Ribs: Preheat your oven to 300°F (150°C). Brush the ribs with extra virgin olive oil and wrap them tightly with aluminium foil. Roast in the oven for 2 1/2 hours.
Step 3
Rehydrate the Dried Chipotle Peppers: Cover the dried chipotle peppers with hot water. Let them soak for 20 minutes until they are soft. Once soft, remove the stems and seeds and finely chop the peppers.
Step 4
Prepare the Honey Chipotle Glaze: Combine the finely chopped chipotle peppers, honey, rice vinegar, soy sauce, Worcestershire sauce, minced garlic, and sesame oil in a medium saucepan. Bring the mixture to a simmer over medium heat while stirring occasionally. Reduce the heat to low and cook for 10-12 minutes until the sauce thickens. Remove from the heat.
Step 5
Finish the Ribs with Honey Chipotle Glaze: Increase the oven temperature to 425°F (220°C). Brush the roasted ribs with the honey chipotle glaze. Return the ribs to the oven and roast for 20 minutes until the glaze is caramelized and sticky. Keep a close eye on them to prevent burning.
Step 6
Finish and Serve: Remove the ribs from the oven and let them rest for 10 minutes before plating. Transfer the ribs to a serving platter. Sprinkle the freshly chopped cilantro and toasted sesame seeds over the ribs. Serve steamed jasmine rice or stir-fried vegetables for a complete meal.
