- 8 bone-in, skin-on chicken thighs
- 3 dried chipotle peppers
- 1/2 cup honey
- 2 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 3 cloves of minced garlic
- 1 teaspoon ground cumin
- 1 juiced lime
- to taste salt and ground black pepper

Garlic Mashed Roasted Potatoes
- 1 pound peeled and cubed russet potatoes
- 6 cloves of minced garlic
- 3 tablespoons unsalted butter
- 1/4 cup whole milk
- 2 tablespoons extra virgin olive oil
- to taste salt and ground black pepper
Method
Step 1
Rehydrate the Dried Chipotle Peppers: Place the dried chipotle peppers in a bowl with hot water. Let them soak for 20 minutes until they are soft enough to chop finely.
Step 2
Marinate the Chicken: Combine the chopped chipotle peppers, honey, extra virgin olive oil, apple cider vinegar, Worcestershire sauce, soy sauce, minced garlic, ground cumin, lime juice, salt, and ground black pepper in a large bowl. Mix well. Add the chicken thighs to the bowl and coat them well with the sauce. Cover and marinate for at least 30 minutes.
Step 3
Roast the Potatoes: Preheat your oven to 400°F (200°C). Spread the cubed potatoes on a baking sheet and toss them with extra virgin olive oil, salt, and ground black pepper. Roast for 30 minutes until the potatoes are golden brown and tender.
Step 4
Roast the Chicken: Place the marinated chicken thighs in a baking dish. Roast in the oven for 30 minutes, until the chicken is cooked through and the skin is crispy.
Step 5
Reduce the Marinade: While the chicken is roasting, transfer the leftover marinade to a small saucepan. Bring it to a boil, reduce the heat, and simmer until the sauce thickens, 10-12 minutes.
Step 6
Sauté the Garlic: Melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté until fragrant, 1-2 minutes. Stir in the whole milk until well combined and heated through.
Step 7
Mash the Potatoes: Transfer the roasted potatoes to a large mixing bowl. Pour the sautéed garlic and butter over the potatoes. Mash the potatoes until smooth and creamy. Adjust the consistency with more milk as necessary. Season with additional salt and ground black pepper to taste.
Step 8
Finish the Chicken: Remove the chicken from the oven and drizzle the reduced marinade over it. Return the chicken to the oven and roast for an additional 15 minutes. Let it rest for 5-10 minutes before serving.
Step 9
Serve: Spoon the garlic mashed roasted potatoes onto plates. Serve the honey chipotle chicken alongside the potatoes. Drizzle with any remaining reduced marinade. Garnish with freshly chopped cilantro and serve with lime wedges.
