For the Cauliflower
- 1 head of cut into florets cauliflower
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- to taste salt and ground black pepper
- for frying vegetable oil

For the Honey Chipotle Sauce
- 3 rehydrated and chopped roughly chipotle peppers
- 2 cloves minced garlic
- 1/2 cup honey
- 1/4 cup soy sauce
- 1 juiced lime
- 1 tablespoon apple cider vinegar

Step 1
Prepare the Cauliflower: Clean and cut the cauliflower into bite-sized florets.

Make the Batter: In a bowl, whisk together the flour, garlic powder, paprika, salt, and ground black pepper to form a thick batter. Gently whisk in the buttermilk until a thick batter forms.
Step 3
Batter and Fry the Cauliflower: In a frying pan or deep fryer, heat the oil to about 350°F (medium heat). Dip the cauliflower florets into the batter, ensuring each is well coated. Fry in batches if necessary to avoid overcrowding. Fry the battered florets in the hot oil until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Prepare the Honey Chipotle Sauce: In a saucepan, combine the finely chopped chipotle peppers, minced garlic, honey, soy sauce, lime juice, and vinegar. Heat over medium, stirring occasionally, until the mixture comes to a slight simmer. Allow it to cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
Step 5
Toss Cauliflower in Sauce: In a large bowl, toss the crispy fried cauliflower with the honey chipotle sauce, making sure each floret is evenly coated.

Serve: Serve the Honey Chipotle Cauliflower Bites immediately. They can be enjoyed as is or with a side of ranch or blue cheese dressing for dipping.
