ingredients

  • 1 pound cored and diced heirloom tomatoes
  • 1 small diced white onion
  • 1 small seeded and finely chopped jalapeno
  • 1/2 cup freshly chopped cilantro
  • 1 juiced lime
  • to taste salt and ground black pepper

Method

  • Step 1

Prepare the Tomatoes: Start by coring the heirloom tomatoes to remove the hard part where the stem attaches. Then dice the tomatoes into small, even pieces. If you prefer your salsa with less juice, you can also remove the seeds at this stage.

  • Step 2

Chop Onion and Jalapeño: Finely chop the onion. For the jalapeño, first remove the seeds, and then finely chop the pepper. Adjust the amount of jalapeño to match your preferred spice level.

  • Step 3

Combine Ingredients: In a large mixing bowl, combine the diced tomatoes, chopped onion, and jalapeño.

  • Step 4

Add Cilantro and Lime Juice: Squeeze in the juice from the lime. Stir in the chopped cilantro. Mix well.

  • Step 5

Season: Sprinkle salt and ground black pepper over the mixture, adjusting the quantity to taste. The salt helps to bring out the natural flavors of the tomatoes and other ingredients.

  • Step 6

Mix and Rest: Gently mix all ingredients until they are well combined. Allow the salsa to sit for about 10-15 minutes before serving. This resting time allows the flavors to meld together more fully.

  • Step 7

Serve: Your heirloom tomato salsa is now ready to be enjoyed. Serve it with tortilla chips, as a vibrant topping for tacos, or alongside your favorite Mexican dishes.
