ingredients

  • 3 pounds chopped heirloom tomatoes
  • 3 tablespoons extra virgin olive oil
  • 1 large diced onion
  • 4 cloves minced garlic
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth
  • 1/2 cup freshly chopped basil
  • 1/2 cup heavy cream
  • to taste salt and ground black pepper

Method

  • Step 1

    Prepare the Tomatoes: Thoroughly wash and chop the heirloom tomatoes.

  • Step 2

    Sauté Onions and Garlic: In a large pot, heat the extra virgin olive oil over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

  • Step 3

    Add Tomato Paste: Stir in the tomato paste and cook for 1-2 minutes.

  • Step 4

    Cook the Tomatoes: Add the chopped tomatoes. Cook for 10-15 minutes, until the tomatoes soften and start to break down.

  • Step 5

    Add Broth and Simmer: Pour in the broth. Bring the mixture to a boil, and then reduce the heat and let it simmer for 45 minutes.

  • Step 6

    Add Basil and Blend: Stir in the chopped fresh basil.

  • Step 7

    Blend the Soup: Use an immersion blender to puree the soup in the pot until smooth, or use a regular blender and blend in batches if necessary. Be careful when blending hot liquids.

  • Step 8

    Stir in Cream: Return the blended soup to the pot (if using a regular blender) and stir in the heavy cream. Heat through, but don’t bring to a boil.

  • Step 9

    Season and Serve: Taste and adjust seasoning with salt and ground black pepper. Serve the bisque hot, garnished with freshly chopped basil and a drizzle of extra virgin olive oil.
