For the Crust
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter
- 1/4 cup sugar

- 24 ounces softened cream cheese
- 1 cup sugar
- 4 large eggs
- 1 cup guava nectar
- 1 teaspoon vanilla extract

- 1/2 cup guava nectar
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons sugar
- 1 tablespoon lime zest
- 1 tablespoon cornstarch
Method
Step 1
Prepare the Crust: Preheat the oven to 350°F (175°C). Mix the graham cracker crumbs, melted butter, and sugar in a bowl until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, and then remove it from the oven and let it cool.
Step 2
Make the Filling: Beat the cream cheese and sugar in a large bowl with an electric mixer until smooth. Add the eggs one at a time, beating well after each addition. Mix in the guava nectar and vanilla extract until smooth. Pour the filling over the crust. Bake for 60-70 minutes or until the center is set. Cool the cheesecake in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours, preferably overnight.
Step 3
Prepare the Guava Lime Glaze: Whisk together the guava nectar, lime juice, sugar, and cornstarch in a small saucepan over medium heat. Cook, stirring constantly, until the mixture thickens and becomes clear, about 5 minutes. Stir in the lime zest, and then remove it from the heat and let it cool slightly. Spread the glaze over the chilled cheesecake. Refrigerate the cheesecake again until the glaze is set, about 1 hour.
Step 4
Serve: Serve the cheesecake chilled alongside whipped cream. Garnish with freshly grated lime zest.
