- 1 pound ground lamb
- 2 large peeled and cubed sweet potatoes
- 2 medium peeled and cubed carrots
- 1 large peeled and cubed rutabaga
- 3 cloves of minced garlic
- 1 teaspoon paprika
- 1 teaspoon freshly chopped rosemary
- 1 teaspoon freshly chopped thyme
- 2 tablespoons extra virgin olive oil
- 1 cup ricotta cheese
- 1 tablespoon freshly grated lemon zest

Method
Step 1
Preheat the Oven and Roast Vegetables: Preheat your oven to 425°F (218°C). Toss the diced sweet potatoes, carrots, and rutabaga with 1 tablespoon of extra virgin olive oil, salt, ground black pepper, and paprika. Spread the vegetables on a baking sheet in a single layer. Roast for 20-25 minutes, until tender and slightly caramelized.
Step 2
Cook Ground Lamb: While vegetables roast, heat the remaining tablespoon of extra virgin olive oil in a large skillet over medium heat. Add the ground lamb, season with salt and ground black pepper, and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Step 3
Combine Lamb and Roasted Vegetables: Once the vegetables are roasted, add them to the skillet with the lamb. Stir to combine.

Add Fresh Herbs: Sprinkle the freshly chopped rosemary and thyme over the lamb and vegetable mixture. Stir well to distribute the herbs throughout the hash. Cook together for an additional 2-3 minutes to allow the flavors to meld.

Add Ricotta and Lemon Zest: poon the hash into individual serving dishes or a large platter, ensuring a good mix of lamb and vegetables in each portion. For each serving, add a dollop of ricotta cheese on top of the hash. The warmth from the hash will slightly melt the ricotta, making it creamier. Sprinkle freshly grated lemon zest over the ricotta and hash.
