- 2 large sliced lengthwise zucchinis
- 3 large heirloom tomatoes
- 1/4 cup diced red onion
- 1/2 cup chopped basil
- 1/4 cup grated Parmesan cheese
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 clove of minced garlic
- 1 tablespoon freshly squeezed lemon juice

Method
Step 1
Prepare the Grill: Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
Step 2
Grill the Zucchini: Brush the zucchini strips lightly with 1 tablespoon of extra virgin olive oil and season with salt and ground black pepper. Grill the zucchini for 2-3 minutes on each side, or until tender and grill marks appear. Allow the grilled zucchini to cool slightly, then chop them into bite-sized pieces.
Step 3
Make the Dressing: In a small bowl, whisk together the remaining extra virgin olive oil, balsamic vinegar, honey, minced garlic, salt, ground black pepper, and lemon juice until well combined.

Assemble the Salad: In a large salad bowl, combine the grilled zucchini, heirloom tomato wedges, and thinly sliced red onion. Drizzle the dressing over the salad and gently toss to combine, making sure the vegetables are evenly coated.
