For the Cesar Dressing
- 4 fillets of minced anchovy
- 2 cloves of minced garlic
- 1 teaspoon Dijon mustard
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon apple cider vinegar
- 1/2 cup mayonnaise
- 1 teaspoon prepared horseradish
- 1/4 cup extra virgin olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon ground black pepper
Method
Step 1
Prepare Cesar Salad Dressing: In a mixing bowl, combine the minced anchovy fillets, minced garlic, Dijon mustard, freshly squeezed lemon juice, apple cider vinegar, mayonnaise, prepared horseradish, and ground black pepper. Mix until well combined.
Step 2
Add in Oil and Cheese: Slowly whisk in the extra virgin olive oil and the Parmesan cheese. Whisk the ingredients together until they are well combined and the dressing is smooth and creamy. Taste the dressing and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice to suit your preferences. Cover and refrigerate for at least 30 minutes to allow the flavors to meld, while you prepare the rest of the salad.

Cook the Bacon: In a skillet over medium heat, cook the bacon slices until they are crispy, about 5-7 minutes. Once cooked, remove them from the skillet and let them cool. Chop or crumble them into small bits.

Prepare the Romaine Lettuce: Cut each heart of romaine lettuce in half lengthwise, leaving the core intact to hold the leaves together. Brush both sides of the romaine lettuce halves with extra virgin olive oil, ensuring they are evenly coated.
