For the Fried Mahi Mahi
- 4 fillets of mahi mahi
- 1 cup all-purpose flour
- 2 eggs
- 1/4 cup heavy cream
- 1 cup breadcrumbs
- 1 tablespoon paprika
- to taste salt and ground black pepper

For the Guacamole
- 2 ripe avocados
- 1 finely chopped jalapeno
- 2 cloves minced garlic
- 1 juiced lime
- 1 tablespoon chopped cilantro
- to taste salt

For the Creamy Chipotle Lime Sauce
- 3 rehydrated and chopped roughly chipotle peppers
- 1 cup sour cream
- 1 clove minced garlic
- 1 juiced and zested lime
- to taste salt and ground black pepper
Method
Step 1
Prepare the Guacamole: Scoop out the avocado flesh and mash it in a bowl. Mix in the chopped jalapeño, minced garlic, lime juice, and cilantro. Season with salt to taste and set aside until ready for use. Cover and refrigerate to allow the flavors to meld.
Step 2
Prepare the Creamy Chipotle Sauce: In a blender or a bowl, combine the rehydrated chipotle peppers, sour cream, minced garlic, lime juice, and lime zest. Blend until smooth, and then season with salt and ground black pepper taste. Set the sauce aside until ready for use.
Step 3
Prepare the Mahi Mahi: Season the Mahi Mahi fillets with salt, ground black pepper, and paprika. Combine the eggs and heavy cream in a bowl. Dredge each fillet in flour, then dip into the egg mixture, and finally coat with breadcrumbs.
Step 4
Fry the Mahi Mahi: Heat vegetable oil in a deep skillet over medium-high heat. Fry the breaded Mahi Mahi fillets until golden brown and cooked through, about 3-4 minutes per side. Remove the fillets from the skillet and drain on paper towels.
Step 5
Serve: Place the fried Mahi Mahi fillets on plates, accompanied by a scoop of guacamole. Drizzle the Creamy Chipotle Lime Sauce over the fillets. Garnish with a sprig of cilantro and/or a lime wedge.
