ingredients

  • 5 sliced pickling cucumbers
  • 2 cups water
  • 1 cup white vinegar
  • 4 cloves garlic
  • 6 sprigs fresh dill
  • 2 tablespoons non-iodized salt
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon coriander seeds
  • 1/2 teaspoon mustard seeds

Method

  • Step 1

    Wash the pickling cucumbers thoroughly and trim off the ends. You can leave them whole or slice them into spears or rounds, as desired.

  • Step 2

    In a saucepan, combine water, vinegar, and pickling salt. Bring the mixture to a gentle boil, stirring until the salt dissolves completely. Remove from heat and let the brine cool to room temperature.

  • Step 3

    In clean, sterilized jars, place the garlic cloves, fresh dill sprigs, black peppercorns, and mustard and coriander seeds.

  • Step 4

    Pack the prepared cucumbers tightly into the jars, leaving about 1/2 inch of headspace at the top.

  • Step 5

    Pour the cooled brine into the jars, making sure the cucumbers are completely submerged. Use a clean utensil to remove any air bubbles and ensure the cucumbers are covered.

  • Step 6

    Place the jars in the refrigerator and allow the pickles to marinate for at least 24 hours to develop flavors. The longer they sit, the more intense the flavors will become.
