- 1 pound gnocchi
- 1 pound ground beef
- 2 ounces dried porcini mushrooms
- 1 small finely chopped onion
- 3 cloves of minced garlic
- 1 cup beef broth
- 1/2 cup heavy cream
- 2 tablespoons white wine vinegar
- 1 tablespoon thyme leaves
- 2 tablespoons extra virgin olive oil
- to taste salt and ground black pepper
- for garnish grated Parmesan cheese
Method
Step 1
Rehydrate the Porcini Mushrooms: Place the dried porcini mushrooms in a small bowl and cover with warm water. Let them soak for about 20 minutes until softened. Once rehydrated, drain the mushrooms (reserving 1 cup of the soaking liquid), rinse them under cold water to remove any grit, and roughly chop them.
Step 2
Cook the Ground Beef: Heat the extra virgin olive oil over medium heat in a large skillet. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Season with salt and ground black pepper. Remove from the skillet and set it aside.
Step 3
Cook the Aromatics: Add the finely chopped onion to the same skillet and cook for 4-5 minutes until softened and translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.
Step 4
Add the Mushrooms and Deglaze: Add the chopped porcini mushrooms to the skillet and cook for 2-3 minutes. Pour in the white wine vinegar and cook for another 2 minutes, scraping up any browned bits from the bottom of the skillet.
Step 5
Make the Sauce: Add the reserved porcini soaking liquid and beef broth to the skillet. Stir in the thyme leaves, and season with salt and ground black pepper to taste. Let the sauce simmer for about 3-4 minutes, allowing it to thicken slightly.
Step 6
Cook the Gnocchi: Add the gnocchi directly to the skillet with the sauce. Cook the gnocchi in the sauce for 4-5 minutes, stirring occasionally, until they are tender and fully cooked. Pour in the heavy cream and stir to combine. Cook for another 2-3 minutes, allowing the sauce to thicken.
Step 7
Combine and Serve: Return the cooked ground beef to the skillet and stir everything together until well combined and heated through. Garnish with grated Parmesan cheese, and serve hot.
