ingredients
- 16 ounces fettuccini pasta
- 3 dried chipotle peppers
- 2 cups corn kernels
- 1 small finely diced onion
- 4 cloves of minced garlic
- 2 tablespoons extra virgin olive oil
- 2 cups heavy cream
- 1 teaspoon lime juice
- 1 cup grated Parmesan cheese
- for garnish lime wedge
- for garnish chopped cilantro
- to taste salt and ground black pepper
Method
Step 1
Prepare the Chipotle Peppers: Place the dried chipotle peppers in a bowl and cover with hot water. Let them soak for 20-30 minutes until they’re soft. Remove the seeds, and then finely chop the peppers.
Step 2
Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package’s instructions until al dente. Reserve about 1 cup of pasta water before draining. Set the cooked pasta aside.
Step 3
Sauté Onion and Garlic: While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3 minutes. Stir in the minced garlic and cook for another 1-2 minutes, or until fragrant.
Step 4
Add Corn and Chipotle: To the skillet, add the corn kernels and chopped chipotle peppers. Cook for about 5 minutes, stirring occasionally, until the corn is tender and the flavors are well combined.
Step 5
Create the Cream Sauce: Pour the heavy cream into the skillet with the corn and chipotle mixture. Bring to a simmer and cook for 5-7 minutes, allowing the sauce to thicken.

Add Cheese and Season: Stir in the grated Parmesan cheese until it’s completely melted into the sauce. Season with lime juice, salt, and ground black pepper to taste.

Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing well to ensure the pasta is thoroughly coated with the cream sauce. If the sauce is too thick, gradually add the reserved pasta water until you achieve the desired consistency.
Step 8
Garnish and Serve: Serve the pasta garnished with chopped cilantro, a lime wedge, and additional grated Parmesan cheese.
