  • 2 large thinly sliced leeks
  • 3 cups fresh spinach leaves
  • 2 cloves minced garlic
  • 2 tablespoon butter
  • 1 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 1 tablepoons freshly chopped parsley
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper

Method

  • Step 1

    Rinse the sliced leeks thoroughly to remove any dirt. It’s easy for dirt to get trapped deep into the leaves of leeks.

  • Step 2

    In a large skillet or sauté pan, melt the butter over medium heat. Add the leeks and garlic, and sauté for about 5 minutes, until the leeks become soft and translucent.

  • Step 3

    Add the spinach leaves to the skillet and cook for an additional 2-3 minutes, stirring occasionally, until the spinach wilts.

  • Step 4

    Pour in the heavy cream. Sprinkle in the nutmeg, salt, ground black pepper, parsley, and parmesan cheese. Stir to combine all the ingredients until the parmesan cheese melts.

  • Step 5

    Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.

  • Step 6

    Remove the skillet from heat and serve immediately.
