For the Coffee-Ancho Chili Sirloin Steak
- 2 pound sirloin steak
- 3 tablespoons finely ground coffee
- 2 tablespoons ancho chili powder
- 1 tablespoons brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoon vegetable oil

For the Pepper Jack Cheese Sauce
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 2 cups shredded pepper jack cheese

Method
Step 1
Prepare the Steak Rub: Combine the ground coffee, ancho chili powder, brown sugar, garlic powder, onion powder, ground cumin, salt, and ground black pepper in a small bowl. Pat the sirloin steak dry with paper towels and rub the mixture generously over all sides. Allow it to sit at room temperature for about 30 minutes.
Step 2
Cook the Steak: Heat a large cast-iron skillet or oven-safe pan over high heat until it begins to smoke. Add a bit of vegetable oil to coat the bottom of the skillet. Sear the steak for 3-4 minutes on each side until a crust forms. Let the steak rest for 10 minutes before slicing against the grain.
Step 3
Make the Pepper Jack Cheese Sauce: While the steak rests, melt butter in a saucepan over medium heat. Whisk in the flour to form a roux, cooking for about 1 minute. Gradually add milk, whisking continuously until the sauce thickens. Stir in the grated pepper jack cheese until melted and smooth. Season with salt and ground black pepper to taste.
Step 4
Serve: Slice the steak against the grain and serve with warm pepper jack cheese sauce on the side. If desired, garnish with fresh parsley.
