- 4 fillets of triple tail snapper
- 3 pitted and chopped plums
- 2 rehydrated and chopped roughly chipotle peppers
- 2 cloves of minced garlic
- 1 tablespoon soy sauce
- 2 tablespoons honey
- 2 tablespoons lime juice
- 2 tablespoons extra virgin olive oil
- to taste salt and ground black pepper
- for garnish lime wedges
- for garnish chopped green onions
Method
Step 1
Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
Step 2
Make the Chipotle Plum Glaze: In a small saucepan, combine the plums, dried chipotle peppers, honey, soy sauce, lime juice, and minced garlic. Bring the mixture to a gentle simmer over medium heat, stirring occasionally. Let it cook for about 10-15 minutes until the plums are soft and the sauce thickens slightly. Remove from heat and set aside. Using an immersion blend – or transfer to a blender to complete – puree the mixture.
Step 3
Bake the Triple Tail Snapper Fillets: Place the triple tail snapper fillets on the prepared baking sheet. Season them lightly with salt and ground black pepper. Drizzle with extra virgin olive oil. Bake in the preheated oven for about 15-20 minutes, or until the meat is turning white and flakes easily.
Step 4
Apply Chipotle–Plum Glaze: Remove the baking sheet from the oven. Using a brush or spoon, generously coat the baked triple tail snapper fillets with the chipotle plum glaze. Turn the heat of the oven to broil, or it’s highest temperature setting.
Step 5
Broil the Glazed Snapper: Return the glazed snapper fillets to the oven and continue baking for an additional 3-4 minutes. This allows the glaze to caramelize slightly and infuse the fish with flavor. Keep a close eye on them to prevent burning.
Step 6
