ingredients
- 2 cups shredded chicken
- 2 cups sliced shiitake mushrooms
- 2 cups broccoli florets
- 2 tablespoons vegetable oil
- 1 finely chopped shallot
- 3 cloves of minced garlic
- 1 tablespoon freshly grated ginger
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- to taste salt and ground black pepper
- for garnish toasted sesame seeds
Method
Step 1
Prepare the Ingredients: Shred the chicken into bite-sized pieces. Slice the shiitake mushrooms and cut the broccoli into florets. Finely chop the shallot. Mince the garlic and grate the ginger. In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and sesame oil. Pour the sauce mixture over the chicken and vegetables.
Step 2
Cook the Vegetables: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and sliced shiitake mushrooms to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
Step 3
Add the Aromatics: Add the finely chopped shallot and cook for 1-2 minutes until it softens. Add the minced garlic and grated ginger and cook for another minute until fragrant.
Step 4
Add Chicken and Sauce: Add the shredded chicken and prepared sauce to the skillet. Stir everything together to coat the chicken and vegetables with the sauce. Cook for 2-3 minutes until everything is heated through. Season with salt and ground black pepper to taste.
Step 5
Garnish and Serve: Remove from heat and transfer to a serving dish. Garnish with freshly chopped green onion and toasted sesame seeds. Serve the stir fry over cooked rice or noodles, if desired.
