  • 1 pound cut into florets broccoli
  • 4 cups arugula leaves
  • 2 chopped green onions
  • 2 tablespoons extra virgin olive oil
  • to serve lime wedges

For the Soy Aioli

  • 1/2 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • 1 clove minced garlic
  • 1 lemon juice

Method

  • Step 1

    Preheat the Oven and Prepare Broccoli: Preheat your oven to 450°F. Toss the broccoli florets with extra virgin olive oil, salt, and ground black pepper. Spread the broccoli on a baking sheet in a single layer.

  • Step 2

    Char the Broccoli: Roast the broccoli in the preheated oven for about 20 minutes, or until the edges are crispy and slightly charred. Stir halfway through for even charring.

  • Step 3

    Make the Soy Aioli: While the broccoli is roasting, prepare the soy aioli. In a small bowl, whisk together mayonnaise, soy sauce, sesame oil, minced garlic, and lemon juice until well combined. Set the aioli aside or refrigerate until ready to use.

  • Step 4

    Assemble the Salad: Place the arugula leaves on a serving platter or in a large salad bowl. Once the broccoli is charred to your liking, let it cool slightly, and then arrange it over the bed of arugula.

  • Step 5

    Drizzle and Garnish: Drizzle the soy aioli over the charred broccoli and arugula. Sprinkle the chopped green onions on top as a garnish.
