Cast-Iron Seared Flank Steak
- 3 pounds flank steak
- 4 cloves minced garlic
- 2 juiced limes
- 1 juiced orange
- 1 quartered white onion
- 1/4 cup extra virgin olive oil
- 2 tablespoons soy sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 1 tablespoon paprika
- 1/4 cup brown sugar
- 1 teaspoon chili powder
- 2 tablespoons freshly chopped cilantro

- 3 cups thinly sliced red cabbage
- 1 cup diced tomato
- 1/4 cup freshly chopped cilantro
- 1/2 cup freshly chopped green onion
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon salt
- 1 teaspoon ground black pepper

- 12 flour tortillas
- 1 cup queso cheese sauce
- 1 sliced lime
- 1/4 cup freshly chopped cilantro
Method
Cast-Iron Seared Flank Steak
Step 1
In a bowl, combine the minced garlic, lime juice, orange juice, extra virgin olive oil, soy sauce, Worcestershire sauce, salt, ground black pepper, paprika, brown sugar, chili powder, and cilantro. Whisk together well to create a marinade.
Step 2
Place the flank steak in a shallow dish or a resealable plastic bag. Add the quartered onion and lime and orange rinds. Pour the marinade over the steak, making sure it’s evenly coated. Marinate in the refrigerator for 24 hours.
Step 3
Remove the marinated steak from the refrigerator and its dish or resealable plastic bag. Let it sit at room temperature for at least 30 minutes prior to cooking. The center of the steak should be at room temperature to ensure even cooking.
Step 4
Preheat your oven to its “broil” setting. Set a cast-iron skillet on a stovetop burner, and set the heat to high.
Step 5
As soon as the oven is preheated, use a pair of tongs and gently place the marinated flank steak on the hot cast-iron skillet. Leave on the hot burner for about 1 minute, and then transfer it to the oven. Cook for 8-10 minutes, flipping once halfway through.
Step 6
Remove the steak from the oven, and allow it to cool 10 minutes before slicing. Slice the steak thinly against the grain, which helps to ensure tenderness.
Tangy Red Cabbage Slaw
Step 1
In a large bowl, combine the red cabbage, tomato, cilantro, and green onion. Toss to mix them together.
Step 2
In a separate bowl, whisk together the extra virgin olive oil, apple cider vinegar, Dijon mustard, honey, lemon juice, salt, and ground black pepper until well combined.
Step 3
Pour the dressing over the cabbage mixture and toss until all the vegetables are coated evenly. Cover and refrigerate to allow the flavors to develop.

Step 1
Warm the flour tortillas.
Step 2
Top each tortilla with the following ingredients in order: 1 tablespoon cheese sauce (or cheese), 2-3 strips of seared flank steak, 2 tablespoons of tangy red cabbage slaw, a squeeze of fresh lime juice, and a sprinkle of freshly chopped cilantro.
