- 2 cups basmati rice
- 1 cup coconut cream
- 2 cups chicken broth
- 1/4 cup freshly chopped cilantro
- 1 juiced and zested lime
- 1 bay leaf

Method
Step 1
Rinse the Rice: Begin by thoroughly rinsing the basmati rice under cold water until the water runs clear. This step removes excess starch and prevents the rice from becoming too sticky.
Step 2
Prepare the Rice: In a large, heavy-bottomed saucepan, combine the basmati rice, coconut cream, chicken broth, brown sugar, bay leaf, and salt. Stir gently to distribute the sugar and salt evenly.
Step 3
Cook the Rice: Bring the mixture to a boil over medium-high heat. Once boiling, stir once, reduce the heat to low, cover, and simmer. The rice will cook in the coconut cream and chicken broth, absorbing the flavors.

Caramelize the Rice: After 20 minutes, when the rice is nearly done and most of the liquid is absorbed, increase the heat to medium-high for 2-3 minutes. This step will help caramelize the bottom layer of rice, creating a crispy, golden crust.

Rest and Fluff: Remove the pan from the heat. Let it sit covered for 5 minutes to steam and make the rice fluffy. After resting, remove the bay leaf and use a spatula to gently scrape the bottom of the pan, mixing the caramelized rice with the softer rice on top.

Add Lime and Cilantro: Stir in the lime juice and zest, along with the freshly chopped cilantro. Mix well to ensure the flavors are evenly distributed through the rice.
