For the Bread:
- 4 Thai bananas
- 1/2 cup softened unsalted butter
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup store bought or homemade caramel sauce

- 1/2 cup sugar
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla extract
Method
Step 1
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a standard-sized loaf pan.
Step 2
Prepare the Caramel Sauce: In a small saucepan over medium heat, melt the 1/2 cup granulated sugar, stirring constantly until it turns into a deep amber color. Add the 1/4 cup unsalted butter and stir until fully melted and combined. Slowly pour in the 1/4 cup heavy cream while continuing to stir. Be cautious, as the mixture will bubble up. Cook for an additional 1-2 minutes until the sauce thickens slightly. Remove from the heat, add the 1/2 teaspoon vanilla extract, and let it cool.
Step 3
Prepare the Banana Bread Batter: In a large mixing bowl, cream together the softened 1/2 cup unsalted butter and 1 cup granulated sugar until light and fluffy. Beat in the 2 large eggs, one at a time, mixing well after each addition. Stir in the mashed ripe Thai bananas and 1 teaspoon vanilla extract.
Step 4
Combine the Dry Ingredients: In a separate bowl, whisk together the 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.

Mix the Batter: Gradually add the dry ingredient mixture to the banana mixture, stirring until just combined.

Add the Caramel Swirl: Pour half of the banana bread batter into the prepared loaf pan. Drizzle about half of the caramel sauce over the batter. Add the remaining batter on top and swirl in the remaining caramel sauce using a knife or skewer to create a marbled effect.

Bake: Place the loaf pan in the preheated oven and bake for approximately 55 minutes, until a toothpick inserted into the center comes out clean.
Step 8
Cool and Serve: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Drizzle any extra caramel sauce on top if desired.
