  • 1 ripe cantaloupe
  • 1 cup water
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon lemon juice

Method

  • Step 1

    Cut the cantaloupe in half and remove the seeds and rind. Cut the flesh into small cubes.

  • Step 2

    In a saucepan, combine the cantaloupe cubes and water. Bring to a boil over medium heat, then reduce the heat and let it simmer for 15-20 minutes until the cantaloupe is soft and cooked.

  • Step 3

    Using a blender or immersion blender, blend the cooked cantaloupe until smooth and pureed. Strain the puree through a fine-mesh sieve or cheesecloth to remove any solids, extracting the liquid cantaloupe juice.

  • Step 4

    Pour the extracted cantaloupe juice back into the saucepan over medium heat. Add the granulated sugar, vanilla extract, and lemon juice. Stir well until the sugar is completely dissolved.

  • Step 5

    Bring the mixture to boil, turn down the heat, and let it simmer for 10 minutes until it thickens to a syrup-like consistency.

  • Step 6

    Remove the saucepan from the heat and let the syrup cool completely. Transfer the syrup to a sterilized glass jar or bottle for storage.
