ingredients
- 12 ounces angel hair pasta
- 1/2 cup unsalted butter
- 6 cloves of minced garlic
- 1 pint halved cherry tomatoes
- 1/4 cup grated Parmesan cheese
- 1/4 cup freshly chopped basil
- 1 tablespoon extra virgin olive oil
- to taste salt and ground black pepper
Method
Step 1
Cook the Pasta: Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, drain the pasta and set aside.
Step 2
Brown the Butter: In a large skillet, heat the butter over medium heat. Allow the butter to melt and then continue to cook, swirling the pan occasionally, until it turns golden brown and develops a nutty aroma, about 5-7 minutes. Be careful not to burn the butter.
Step 3
Sauté the Garlic and Tomatoes: Add the minced garlic to the browned butter and cook for about 1 minute, until fragrant. Add the cherry tomatoes and a pinch of salt. Cook, stirring occasionally, until the tomatoes soften and release their juices, 3-4 minutes.
Step 4
Combine Pasta and Sauce: Add the cooked angel hair pasta to the skillet with the brown butter, garlic, and tomatoes. Toss to combine, adding reserved pasta water a little at a time to create a light sauce that coats the pasta.
Step 5
Season and Serve: Season with salt and ground black pepper to taste. Drizzle with extra virgin olive oil and toss again to combine.
Step 6
Garnish and Enjoy: Serve the pasta immediately. Garnish with grated Parmesan and chopped basil.
