- 4 large peeled and cut into chunks beets
- 2 tablespoons extra virgin olive oil

- 1/2 cup freshly squeezed blood orange juice
- 1 tablespoon freshly grated ginger
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 clove of minced garlic
- for garnish freshly chopped parsley
Method
Step 1
Roast the Beets: Preheat your oven to 425 °F (220°C). Toss the beets with extra virgin olive oil, salt, and ground black pepper. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until tender and caramelized around the edges. Turn the beets halfway through the cooking time to ensure even roasting.
Step 2
Prepare the Blood Orange Ginger Glaze: While the beets are roasting, combine the blood orange juice, freshly grated ginger, honey or maple syrup, balsamic vinegar, and minced garlic in a small saucepan. Simmer the mixture on medium heat until it reduces by about half and thickens into a syrupy glaze, which should take around 10 minutes. Season with salt and ground black pepper to taste.
Step 3
Glaze the Beets: Once the beets are roasted and have a nice caramelized exterior, remove them from the oven. Drizzle the blood-orange ginger glaze over the hot beet cubes, gently tossing to coat them evenly. The residual heat will help the beets absorb the glaze’s flavors.
Step 4
Serve: Transfer the glazed beet cubes to a serving dish. Garnish with freshly chopped parsley for a pop of color and freshness.
