For the Beef Bulgogi

  • 2 pounds thinly sliced sirloin steak
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup mirin or rice vinegar
  • 2 tablepoons sesame oil
  • 3 cloves minced garlic
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon ground black pepper

For the Spicy Marinated Cucumbers

  • 2 large thinly sliced cucumbers
  • 2 cloves minced garlic
  • 1 small minced shallot
  • 1/2 cup mirin or rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablepsoon sesame oil
  • 1 tablespoon chili oil or red pepper flakes
  • 1 tablespoon honey

For the Garlic Mayo

  • 1/2 cup mayonnaise
  • 3 cloves minced garlic
  • 1 tablespoon freshly squeezed lemon juice
  • salt and pepper to taste

For the Sandwich

  • 4 ciabatta rolls
  • 1 small thinly sliced red onion
  • 4 slices Swiss cheese, optional

Method

For the Beef Bulgogi

  • Step 1

    In a bowl, whisk together the soy sauce, brown sugar, mirin or rice vinegar, sesame oil, garlic, ginger, and black pepper. Add the sliced beef and onion to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor. Freeze the cut of meat for 30-45 minutes prior to slicing for more efficient results.

  • Step 2

    Preheat a skillet, preferably cast-iron, over medium-high heat. Remove the beef from the marinade, letting the excess drip off. Cook the beef for about 2-3 minutes on each side, or until slightly caramelized and cooked through. Set aside but serve warm.

For the Spicy Marinated Cucumbers

  • Step 1

    Wash and thinly slice the cucumbers.

  • Step 2

    In a large bowl, whisk together the garlic, shallot, mirin or rice vinegar, soy sauce, sesame oil, chili oil or red pepper flakes, and honey. Add the sliced cucumbers, tossing to ensure they’re well coated.

  • Step 3

    Cover the bowl and refrigerate for at least 1 hour, or overnight for the best flavor.

For the Garlic Mayo

  • Step 1

    In a small bowl, whisk together the mayonnaise, minced garlic, and lemon juice until well combined. Taste the mayo and season it with salt and pepper as needed.

  • Step 2

    Cover the bowl and refrigerate the mayo for at least 30 minutes to allow the flavors to meld.

For the Sandwich

  • Step 1

    Spread the garlic mayo on your ciabatta rolls. Toasting is optional.

  • Step 2

    To the ciabatta rolls, add a layer of spicy marinated cucumbers, then the beef bulgogi, and finally the sliced red onion. If desired, add a slice of Swiss cheese on top the of warm beef bulgogi.

  • Step 3
