ingredients

  • 3 pound beef chuck roast
  • 12 ounces beer
  • 1 bbq sauce
  • 1 tablespoon tomato paste
  • 1 white onion
  • 3 cloves minced garlic
  • 1 bay leaf
  • 1 1/2 tablespoon salt
  • 1 1/2 tablespoon ground black pepper
  • 1 tablespoon olive oil
  • 2 dried peppers (ancho or chiptole)

Method

  • Step 1

    Preheat the oven to 350°.

  • Step 2

Generously season the beef chuck roast with salt and ground black pepper.

  • Step 3

Heat olive oil in a dutch oven over medium-high heat. Sear each side of the seasoned chuck roast for 3-4 minutes, or a total of 6-8 minutes.

  • Step 4

A a small mixing bowl, stir together the beer, bbq sauce, and tomato paste. Pour over the seared chuck roast. There should be enough liquid to cover 3/4 of the chuck roast, which is what we want.

  • Step 5

Quarter or slice the onion – which ever you prefer – and it to the dutch oven along with the garlic, bay leaf, and dried peppers. Push these ingredients along the sides of the chuck roast and into the liquid.

  • Step 6

Cover the dutch oven and transfer it to the oven. Cook for 3 hours and 20 minutes at 350°.

  • Step 7

Allow the dutch oven and chuck roast to cool slightly before shredding. Once it’s cooled, using tongs and a fork, shred the beef apart and thoroughly mix into the braising liquid. It should coat the beef nicely.
