ingredients

  • 2 ciabatta rolls
  • 1/2 sliced roast beef
  • 4 ounces crumbled gorgonzola cheese
  • 1 cup arugula
  • 1 small thinly sliced red onion
  • 2 tablespoons mayonnaise
  • 1/4 cup balsamic glaze
  • 2 tablespoons extra virgin olive oil

For the Balsamic Glaze

  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar

Method

  • Step 1

    Make the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and brown sugar. Bring to a simmer over medium heat and reduce to half, which should take around 15-20 minutes. The mixture should be thick enough to coat the back of a spoon. Remove from heat and let it cool slightly. It will thicken as it cools.

  • Step 2

    Toast the Bread: Lightly brush each slice of the ciabatta rolls with extra virgin olive oil. Toast the bread in a toaster or an oven until it’s golden and crispy.

  • Step 3

    Assemble the Sandwiches: Lay out the slices of ciabatta rolls. Spread a thin layer of mayonnaise on one side of each roll. On top of that layer – in the following order – arugula, red onion, roast beef, and gorgonzola. Drizzle the balsamic glaze over everything, and top with the remaining slices of bread. Serve immediately, and enjoy!
