๐ŸŒˆ Colourful breakfast/lunch inspiration to start the week and also brighten up this dismal day โ›ˆ - I lightly toasted gluten, dairy and egg free rolls in a pan and added a dollop of smashed avocado (Ingredients โžก๏ธ avocado, chilli flakes, fresh basil, salt & pepper) and finally topped it with my fav seasonal fruit right now, figs! Give it a try you will love it! โ€” Have a great week ๐Ÿ™Œ
Dreamy roasted sweet potato, chickpea and fig salad ๐Ÿ˜๐Ÿ˜๐Ÿ˜ I roasted sweet potato (30 mins) with chickpeas and figs (only take 10-15 mins) and steamed bok choy and broccoli florets as the base of my salad. I then added some smashed avo ๐Ÿฅ‘ and finally topped it with the roasted fig! Give it a try its delicious ๐Ÿคค โ€” Yesterday I hit 20k followers on here ๐ŸŽ‰๐ŸŽ‰๐ŸŽ‰ Thank you all so much for supporting me and my journey!!!
