Todayโ€™s colourful lunch bowl to start the week ๐Ÿ˜ recipe below ๐Ÿ‘‡ โ€” In one tray I simply added chickpeas, broccoli, red pepper and vine tomatoes with a drizzle of olive oil then seasoned with a sprinkle of smoked paprika, salt and pepper then roasted at 200C for 20 mins. I finally plated it up, adding chopped lettuce and avocado ๐Ÿฅ‘
