ingredients

  • 2 (8 ounce) blocks cream cheese, room temperature
  • 1/3 cup monk fruit sweetener
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened Montmorency tart cherries
  • 2 tablespoons juice from the cherries
  • 2 tablespoons unsweetened coconut milk, or heavy cream
  • Whipped cream, optional, for garnish

Method

  • Step 1

    In a large mixing bowl, place the cream cheese, coconut milk, monk fruit, vanilla extract, Montmorency tart cherries and juice.

  • Step 2

    Using a hand held blender, blend on high speed until smooth, about 60 seconds.

  • Step 3

    Line a mini cupcake pan with 24 mini liners.

  • Step 4

    Spoon the cream cheese mixture into each liner. Fill the liners all the way to the top.

  • Step 5

    Transfer the muffin pan to the freezer and allow them to sit for 2-3 hours before serving.

  • Step 6

    Top each bomb with whipped topping of choice and cherry.
