"With Christmas coming up quickly I thought I’d share one of my favourite holiday inspired salads. This Cauliflower Herb & Pomegranate Salad is the perfect amount of salty from the roast cauliflower, sweet from the fresh pomegranate and creamy from the yogurt dressing."

ingredients

  • 1 sliced cauliflower
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1 tbsp olive oil
  • 1/2 cup chopped parsley
  • 1/2 cup chopped chives
  • 1 pomegranate seeds
  • 2 tbsp coconut yogurt
  • 1 crushed clove of garlic
  • 1/4 cup water
  • 1/2 teaspoon ground cumin

Method

  • Step 1

    Pre heat your oven to 200 degrees. Add your cauliflower cumin, turmeric and olive oil to a tray and place in the oven to roast for 20 minutes until golden. In a medium sized bowl add your parsley, chives and pomegranate. Once your cauliflower is cooked add it to the bowl and mix to combine.

  • Step 2

    Mix all of the dressing ingredients together and pour on top of the salad.
