"Chocolate-Covered Clementines rolled in pistachios, sliced almonds, and hemp seeds. The zesty juiciness of the citrus combined with the rich decadence of chocolate is out-of-this-world delicious! Make these for your next get together or keep in the fridge for a handy snack. These go fast!

Ingredients: 1 cup vegan dark chocolate chips ( or make your own with 1/2 cup coconut oil, 1/4 cup coconut butter, 2 Tbl cacao powder, 1 Tbl maple syrup, 1 tsp vanilla, pinch sea salt)
6-8 clementines, peeled and separated segments
1/4 cup each of favorite nuts/seeds (i chose pistachios, sliced almonds, and hemp seeds)

Directions:

In a double boiler (or a pyrex bowl placed on top of a saucepan) bring 1 cup of water in lower pan to a boil to produce steam for the top pan/bowl to heat. Place chocolate chips in the heated bowl and stir until completely melted.

While the chocolate is still melted, dip one clementine segment into the sauce and then dip into nuts/seeds. Place on a parchment paper lined sheet. Repeat until all segments have been dipped.

Place in the refrigerator for 30 minutes or until chocolate is completely set. Take out of fridge when ready to eat!

Quick Tip: I also dip bananas and set them in the freezer. Another awesome crowd pleaser!!"
