With all the chaos going on in my life these days, I don’t always have time to cook these elaborate meals from scratch, so when I saw these at our local @wheatsville, I was pumped to use them as the perfect base for a new recipe.
The Powered by Plants Entrees are on sale at your local co-op from 6/2 through 6/15 for only $5.99. There are a few different options, all with a blend of veggies and grains with no added sauce or seasonings, so I grabbed a few and simply threw in some lean protein and plenty of seasoning, and, voila, dinner was ready in just a matter of minutes! They’re so easy to use and I love just how versatile they all are.

ingredients
- 1 pound chicken breast with rib meat
- 2 tablespoons Southwest chipotle seasoning blend
- 1/4 cup diced onion
- 1 package Cascadian Farms Powered by Plants with Sweet Potatoes, Farro, Black Beans, and Spinach
- 1 10-ounce can diced tomatoes with green chilies, drained
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 cup Mexican cheese blend
- sliced jalapenos, optional
- fresh cilantro, optional
Method
Step 1
Heat a large nonstick skillet over medium heat. Add chicken, season with southwest chipotle seasoning blend. Cook for a few minutes on each side until chicken is cooked through. Remove from skillet.
Step 2
In the same skillet, add red onion and cook for 1 min. Add frozen Powered by Plants blend and tomatoes. Season with smoked paprika and oregano. Cover, cook for 13 to 16 minutes, stirring occasionally.
Step 3
Once farro is cooked through, add chicken and cheese.
Step 4
Garnish with sliced jalapeños and cilantro, if desired.
