"Salad! ????? Baked potato fries, avocado, baked pumpkin, zucchini slices grilled with a little coconut oil, radish, cherry tomatoes, shallots, a bed of rocket, and all drizzled with @mayversfood Tahini. I love a good salad, full of yummy flavours and textures. It really can't be beaten, irrespective of the weather, as you can add warm or chilled items to suit ? Last day of work before the four day Easter weekend in Sydney. Followed not long after by two weeks of school holidays. So I'm looking forward to some family time, and a chance to do some more recipe testing of course ? I hope you all have nice plans for the days ahead, to celebrate and reflect in your own ways ? (Serves 1) 1 potato peeled and sliced into batons Pumpkin slices
1 radish sliced 1 shallot sliced 1/2 avocado sliced 1/2 zucchini sliced thinly lengthwise Large handful of rocket/arugula
4 cherry tomatoes halved Preheat oven to 180C/350F
Spread potato and pumpkin slices on a lined oven tray and season as desired Bake for 20mins, turning once
Oil a grill or grill pan with a little coconut oil and grill zucchini slices for one to two minutes, before turning and repeating on the other side, until lightly browned
Add salad items to a bowl and top with baked potato fries, pumpkin slices and grilled zucchini Tahini dressing
Mix 1 heaped tsp of Tahini with water to your desired consistency. Drizzle over salad
