ingredients
- 1 tablespoon brown sugar
- 1 tablespoon creamy peanut butter (or almond butter)
- 1 tablespoon vegan butter, melted
- 1/4 teaspoon vanilla extract
- 2 tablespoons plus 1 teaspoon all-purpose flour
- 1 tablespoon chocolate protein powder (such as @vitalproteins collagen protein powder)
- 1/2 teaspoon cocoa powder
- 1/2 teaspoon instant espresso powder
- 1/8 teaspoon baking powder
- Pinch of flaky sea salt
- 2 tablespoons dark chocolate chunks or chips
Method
Step 1
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Step 2
In a bowl, whisk together melted vegan butter, peanut butter, brown sugar, and vanilla extract. Stir in flour, protein powder, cocoa powder, espresso powder, baking powder, and salt until a soft dough forms. Fold in chocolate chunks.
Step 3
Form the dough into one large cookie on the prepared baking sheet. Bake for 12 minutes for a gooey cookie or 14-15 minutes for a more well-done cookie that is still chewy and moist. Finish with a sprinkle of flaky sea salt. Allow to cool for 3 minutes before enjoying.
