ingredients

  • 2 cups oat flour
  • 1/2 cup coconut sugar
  • 1/3 cup coconut sugar
  • 1/3 cup cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 cup vegan yogurt
  • 1/2 cup olive oil
  • 1 tablespoon peppermint extract
  • candy canes, crushed, to top
  • frosting, to top

Method

  • Step 1

    Preheat oven to 350ºF and grease a loaf pan.

  • Step 2

    In a large bowl, whisk together dry ingredients.

  • Step 3

    In a separate bowl, whisk wet ingredients until combined. Mix the wet ingredients into the dry ingredients whisk until well combined and smooth.

  • Step 4

    Transfer batter to prepared pan and even out with a spoon. Bake for 45-50 minutes or until a toothpick inserted comes out clean.

  • Step 5

    Allow to cool before decorating with frosting and crushed candy canes to finish.
